Pomegranate Baked Oatmeal

Man is it good to be home. I don’t realize how much I miss this place until I’m actually back. I arrived home in New Berlin yesterday afternoon and spent most of my day catching up with the Parents and brother. We went out for a family dinner, in celebration of Selina’s (our foreign exchange student from Switzerland..you will meet her in a later post) 16th birthday! Afterwards, the sis and I went bar hopping. Me…bar hopping, I know right! In my town it has become a tradition that the night before Thanksgiving, all high school graduates meet at Lee’s Pub. Come on now. Wisconsin = Beer. Plus, the Pub we went to has the most beautiful name I have ever heard It was so great to see everyone. I was surprised at how good everyone looked and seemed.

Anyways…moving on to more important matter. Breakfast

Hot Diggity Dog. 1) I love not being the first one up in the morning. 2) And the fact that there is always a big grass pot of coffee waiting for me 3) ANDDDD that there was a ripe, juicy pomegranate sitting in the fruit bowl screaming my name.

Pomegranate Baked Oatmeal

Ingredients

  • 1/3C quick cooking oatmeal
  • 2/3C water
  • 2T pomegranate juice
  • 1/4C pomegranate seeds
  • packet of stevia
  • 1 large egg white
  • pinch of salt
  • 1/4t baking soda

Method

  1. Preheat oven to 325F.
  2. In a medium sized bowl, mix together all ingredients. (extremely hard, I know).
  3. Grease a small ramekin with nonstick cooking spray (don’t forget this step of you will be sorry!) and pour in batter. I filled mine about 3/4 of the way.
  4. After this,Bake for ~35 minutes or until the top begins to brown
  5. Serve with greek yogurt, agave nectar, and more fresh pomegranate seeds.

I was a little bit nervous that this bake wouldn’t be sweet enough. It was perfect. I glad I decided to add stevia at the last minute. The agave on top was genius.

Kind of embarrassing to admit, but the whole de-seeding of the pomegranate was an epic battle. It looked like I had just returned from battle. Maybe I should have googled it?OH YEAH…I almost forgot.

Bloggies, meet my new baby sister, Sasha. She is a 13 week old yellow lab that my parents got a few weeks ago…Get ready for puppy overload of FFF because everything this little one does is just way to stinkin’ cute.

Time for a butt kickin’ workout and then it’s Turkey Lurkey Time…I love today!
