leave in 2 days for an 8 day long trip to Toronto and Chicago and I haven’t even thought about starting to back. I am SUPER excited to spend the next week with Davida. EEEEEEEE. She’s been going to this barre studio that I’m really excited to try out….and for someone else to cook for me. Sad, but true
Davida and I have been friends for about a year and a half, and since then, she’s come to visit me in Minnesota like 5 times. There’s good reasoning behind it. Her other half, Curt, grew up in my neighborhood and his parents still live in the same house. Works for me
It’s really weird having your best friend live in a different country. It’s manageable, but absolutely impossible to just go grab a drink with the guys or workout together not via in the internets.
Oh the power of Skype. My favorite is when one of us is sautéing something on the stove and still able to have a conversation from hundreds of miles away.
So this smoothie.

I do have a confession.
I had a MAJOR fail with this recipe last week. 1. don’t EVER put an entire orange in your blender and think that’s a good idea. Let’s just say the smoothie wasn’t pulp free 2. Don’y try and take a photo when the sky is grey/blue and it’s snowing. No matter how many times you try and adjust white balance, it’s just not going to work.
And then there was try number 2. A slightly different recipe and much better lighting.

The coconut milk in this recipe is essential. It definitely gives the “creamsicle” aspect of this recipe! Plus- it adds a tropical punch.
Speaking of tropical. I am white as a ghost. This girl needs some color, some sunshine, pa-lease.
