orange coconut power balls

I woke up this morning to big booms of thunder and strikes of lightening. I’m all about the sunshine, but it actually feels good to get some solid rain. It’s been pretty dry here and my basil plant is looking a little shriveled.

I wanted to share this ball recipe because Linley and I used them as a party favor at the the event we catered this past weekend and the moms LOVED them! Plus, PB Balls are perfect for a rainy day like today!

I gave my typical PB Ball recipe a major twist and used some orange extract. Uh, why didn’t I think of this earlier? I also added some chia seeds for some texture and extra goodness.

All together now…Peanut Butter + Honey + Oat Flour + Chia Seeds + Shredded Unsweetened Coconut + Orange Extract.

Orange Coconut Power Balls

  1. Ingredients
  2. -1/2C quick cooking oats (certified gf)
  3. -1/4C all natural peanut butter
  4. -1/4C honey, raw
  5. -1/4 cup shredded coconut, unsweetened
  6. -1/2 teaspoon orange extract
  7. -1 tablespoon chia seeds
  1. Method
  2. 1. In a small food processor, process oats for 15-20 seconds or until it is the consistency of flour.
  3. 2. Add the rest of your ingredients and process for about a minute, or until it becomes doughy. (You may need to add a squirt more of honey if it is still too dry.)
  4. 4. Using a small cookie scoop, scoop out the dough and role between your palms. Each batter make around 10 balls depending on how much dough you eat 😉

I finally replenished my chia seeds, I had been out for months. Good lord has my oatmeal missed them.

This is the orange extract I used. I picked it up from a co-op near work. A little bit goes a long way! I think I used less than a teaspoon.

One last thing…how cute are these little ball holders? They are made of silicone I believe (I threw away the package), but are actually re-usable mini muffin holders. Ashley gave me a big bag of blog goodies back in April for my birthday and these were one of them! Love it.
