Cocoa and Peanut Butter Oat Balls

I really do love having a reason to bake and create. At work yesterday, we have a new guy start in the Marketing Department. I can’t think of a nicer gesture than to make him some balls! I also made another back of balls last night for Blake’s holiday shenanigans at work today. The ones I made for Blake were similar to this or this, but with dark chocolate drizzled on top.

Is anyone else super excited about gas prices? $2.95 here! I drive around 34 miles BOTH ways to work and back, so my gas bill is through the roof. I could get used to prices like this….

Alright- back to the balls…

These are a normal ball recipes, but I didn’t grind the oats. I actually kind of like it better with whole oats. It gives it great texture and doesn’t seem like you are eating cookie dough straight out of the bowl. One thing to note though, they were a little dryer, so you may need to add a splash of water or a little more honey!

Ingredients

  • 1 C rolled oatmeal
  • 1/4C honey or brown rice syrup
  • 1/4C all natural peanut butter
  • 2T cocoa powder

How to make Cocoa and Peanut Butter Oat Balls

  1. In a medium size bowl mix together all ingredients.
  2. Then using a small cookie scoop, scoop out dough and roll between your palms to form balls.
  3. Eat

This should make between 10-12 balls. I actually made a double recipe…so I got about 22 out of it!
