This no-mess taco casserole is the perfect family meal. It’s easy to prepare and and only one dish is necessary! Did I mention clean up is a breeze?
Can I just say that whoever invented stand-up hardshell taco shells is an absolute genius. It’s one of those things where you ask yourself why hard shell taco shells didn’t aways have that flat part so you could stand them up on your plate. I made this for the boys last weekend. Clay (my younger bro) comes over every Sunday to do his laundry and of course, eat some grub I got 2 thumbs up from the boys with this casserole. Aka no one said a word at dinner…they just ate.

Plus, it’s August, and August means Fall.
Sad face.
I actually love Fall here in Minneapolis. I love chili, and sweaters, and boots, and sleeping with the windows open, and crisp nights, and colorful leaves.
I don’t, however, love what comes after fall.
So back to these stand-up taco shells. Like, fer realz no mess.
Ingredients for No-Mess Taco Casserole
ground turkey
corn, rinsed
black beans
restaurant-style salsa, I used medium
yellow onion
taco seasoning
salt and pepper to taste
Mexican-style or Colby-Jack cheese
I usually use soft-shell tacos, but the brother insisted on both because he said “I’m so hungry I’l probably eat all 10 of these taco shells.”
On top we used Greek yogurt, sliced avocado, a sprinkle of paprika and cilantro.
Perfection.
Yah literally just throw stuff in a casserole dish and mix it all up. Throw some cheese on top and you’ve got yourself one hell of a casserole.
If you could turn any meal into a casserole, what would it be?
In a large bowl, mix together ground meat, diced onion, and salsa. Then, season with taco seasoning, salt, and pepper.
Place mixture into a large casserole dish. Then, pour on a can of black beans and corn.
Bake at 375ºF for 45 minutes. Use a large spoon to remove and grease that has come to the top. Sprinkle on cheese, place back in the oven for about 30 more minutes. Remove any more grease that has come to the top.
Serve with hard shell tacos, Greek yogurt or sour cream, and avocado.
