Homemade Chewy Bar Bites

I kid you not…these bites (slash balls) taste exactly like the real deal….but made with far less ingredients and FAR BETTER! I made these for Sister and Sisterboy’s housewarming gift! Michelle will officially be moving back to Minnesota for her third year of law school! Right now, she is still deciding between The University of Minnesota and William Mitchell. Both great school and both closer to me than Colorado!

I made a double batch for this particular get together. Usually my ball recipes yield around 10-12 balls…this made around 20 bigger balls

Ingredients (yields 20 balls)

-1 cup quick cooking oats
-1 cup puffed brown rice
-1/3 cup chocolate chips
-1/2 cup almond butter, unsweeteened
-1/3 cup brown rice syrup

How to make Homemade Chewy Bar Bites

  1. In a medium size bowl, mix together almond butter and brown rice syrup. If the almond butter is not drippy, throw it in the microwave for about 30 seconds.
  2. Next, add the rest of the ingredients and mix with a wooden spoon.
  3. Finally, form into balls. You may need to get your hands wet in order to do this because of the stickiness

*Note: If you are a big peanut butter fan- use peanut butter. The unsweetened almond butter is what gives the chewy bar bites it’s chew bar taste!

My plan for the rest of the day is: obviously work, then I teach! and then I am going to study for my Ace GFI exam while I wait for Blake to get done with class.
