Healthy Chocolate Peanut Butter Muffins

Wet ingredients

    • 2 medium-large bananas, mashed
    • 1 egg, large
    • 2 egg whites, large
    • 1/4 cup Greek yogurt, nonfat
    • 1/3 cup all-natural peanut butter
    • 3 tablespoons coconut oil, partially melted
    • 1 teaspoon vanilla extract
    • 1/4 cup unsweetened almond milk

Dry Ingredients

  • 1 cup ground oat flour
  • 2 teaspoon baking powder
  • 1/4 cup coconut palm sugar
  • 1/4 cup + 2 tablespoons cocoa powder
  • pinch of salt
  • optional: 1/4 cup mini dark chocolate chips

Instructions

  1. First, preheat oven to 350ºF and spray a muffin tin with coconut oil spray. (Option: to line with muffin liners and spray, but not necessary).
  2. In a medium-sized bow, mash bananas until liquid. Then add in the rest of the wet ingredients (minus the coconut oil, we will add this very last) and mix until smooth.
  3. Next, add in dry ingredients and mix until smooth. Finally add in melted coconut oil and mix until smooth.
  4. Spoon batter into muffin tin, filling about 2/3 of the way full.
  5. Bake at 350 for 23-25 minutes or until you do the toothpick test and it comes out clean.
