BREAKFAST POT-LUCK!

Yeah that’s right. I get to have two breakfasts today and I might even make it three if I’m still feeling it when I get home from teaching a class tonight after work. I signed up for something I’ve never really made before…scones. I decided to go the “semi-homemade” route and buy a box of scone mix instead of making them from scratch. I was at Whole Foods yesterday and was lucky enough to find a gluten-free mix.

Apricot scones it is.

make the scones was pretty easy. All I did was follow the directions on the box and then I added about a half a cup of chopped dried apricots. Nothing special at all. Hence the semi-homemade. It’s very different from store bought, you still have to put some elbow grease in it and get your hands dirty.

Here is the brand I used: Gluten Free Pantry Scone and Muffin Mix. Also, here’s the ingredient list (a very typical lineup for gluten free baking): White Rice Flour, Sugar, Potato Starch, Corn Starch, Baking Powder (corn), Salt, Sodium Bicarbonate, xanthan gum.

So buttery and delicious. These aren’t the healthiest thing for you, but that’s why we have moderation, right?

I did make the lemon glaze from scratch. All you need is about a cup of powdered sugar + a few drops of lemon extract + a tablespoon or so of water. I like my glaze a little bit on the thicker side, but if you want it thinner, add a little bit more water and viola.

I’ll post some photos during lunch to show you what everyone else brought. I know for sure there are some quinoa pancakes and bacon on the radar.
