Who doesn’t like cookie dough?

The base is similar to my Fit Foodie Ball recipes: ground oats + nut butter + maple syrup + chocolate chips.

The chocolate coating is made from dairy-free chocolate chips and coconut oil. Melt em together and you’ve got magic.

The best part is, you store these guys in the freeze so you can pop em cold!

Frozen Vegan Chocolate Chip Cookie Dough Bites

Ingredients

Scale
  • 1 cup ground oat flour
  • ¼ cup mini chocolate chips, dairy free
  • ¼ cup maple syrup
  • ~1/3 cup almond butter
  • -2 tablespoons water
  • 1 teaspoon vanilla
  • 1 pinch of salt
  • ¼ cup chocolate chips, non-dairy
  • 2 tablespoons coconut oil

Instructions

  1. Place all ingredients together in a medium-sized bowl. Then, mix with a wooden spoon. You may need to add a tablespoon or two more of water. It should be the consistency of classic cookie dough.
  2. Scoop out a teaspoon of dough and form into a bite-sized pieces. Repeat about 100 more times. Set aside.
  3. Create chocolate hardshell topping by heating together chocolate chips and coconut oil. You can do this in the microwave or on the stove stop. Once melted, transfer to a small tupperware.
  4. Line a baking sheet with parchment paper.
  5. Dunk cookie dough bites in chocolate/coconut oil mixture. Using a fork, transfer to baking sheet.
  6. Place in freezer for about 5 minutes to let harden.
  7. Store in a tupperware in the freezer. Note: the chocolate hard shell will melt at room temperature!
