Coconut Cinnamon Raisin French Toast Bake with Blackberry Greek Yogurt Sauce

Ingredients

  • -6 pieces of cinnamon raisin bread
  • -5 eggs, large
  • -1/4 cup coconut milk (I used Silk)
  • -1 tablespoon honey

Instructions

  1. First preheat oven to 350 and grease a medium size baking dish with coconut oil.
  2. Next, slice 6 pieces of cinnamon raisin bread into squares. Set aside.
  3. In a large bowl, crack 5 eggs and pour in ¼ cup of coconut milk and 1 tablespoon of honey and whisk until combined.
  4.  Place bread into the egg mixture and fold until all of the pieces of bread have been generously coated.
  5. Transfer bread into baking dish (you will have left over egg mixture). Bake at 350 for about 30-35 minutes, or until completely cooked in the middle.
