Ingredients
- -1 cup nonfat Greek yogurt, plain
- -1/4 cup low fat cream cheese (room temperature)
- -2 tablespoons powdered sugar
- -1/8 teaspoon peppermint extract
- -1 cup Lite Cool Whip
- -3T cocoa powder
- -1 batch Gluten Free Graham Cookies, turned into crumbs
Instructions
- First, make your graham cracker crumbs. Place graham cookies into a food processor and process until they turn into crumbs. Set aside.
- Next, make your peppermint layer. Mix together Greek yogurt and cream cheese. Then, add in peppermint extract and powdered sugar and mix again. Set aside.
- To make the chocolate layer, mix together Coo Whip and cocoa powder.
- Finally ensemble your parfaits. Using a spoon, spoon the peppermint and chocolate layers into separate sandwich baggies. This is what you will use to pipe them into your glasses. First- spoon about a tablespoon of graham cracker crumbs on the bottom of your glass. The, pipe in 1-2 tablespoons of the peppermint and chocolate layers.
- Top with crushed peppermint, graham cracker crumbs, and dark chocolate drizzle. Serve cold.
