So this recipe came to me while I was laying in bed.
Why do all my good ideas come to me when I’m: running, showering, or laying in bed?
I knew I wanted to use my Gluten Free Graham Cookie Recipe to make homemade graham cracker crumbs and mix in some festive flavors like peppermint and chocolate, but I wasn’t exactly sure what I wanted to make.
Then, I brushed my teeth, put my PJs on, and hopped in bed.
And. It hit me.
A parfait!
Good thing Target has a $1.00 section. Got 4 shot glasses for $4.00…you can’t beat that! I also got my festive striped straws from Target, too! What would the world be like without Target?
I absolutely love the mixture of tangy and sweet in this recipe. The white layer is the peppermint layer, made from Greek yogurt, low fat cream cheese, a little powdered sugar, and peppermint extract…just the right amount of tang.
The chocolate layer is Lite Cool Whip (you could sub for homemade whipping cream) mixed with cocoa powder.
Put em together with some graham cracker crumbs.

I posted this photo on my Instagram, showing a behind the scenes look of my photo set up. I used 2 chalk boards as my background and a white poster board for bounce. It’s to cold to shoot any photos outside, so for the next few months I’ll be stationed by a window.

Instructions
First, make your graham cracker crumbs. Place graham cookies into a food processor and process until they turn into crumbs. Set aside.
Next, make your peppermint layer. Mix together Greek yogurt and cream cheese. Then, add in peppermint extract and powdered sugar and mix again. Set aside.
To make the chocolate layer, mix together Coo Whip and cocoa powder.
Finally ensemble your parfaits. Using a spoon, spoon the peppermint and chocolate layers into separate sandwich baggies. This is what you will use to pipe them into your glasses. First- spoon about a tablespoon of graham cracker crumbs on the bottom of your glass. The, pipe in 1-2 tablespoons of the peppermint and chocolate layers.
Top with crushed peppermint, graham cracker crumbs, and dark chocolate drizzle. Serve cold.
