Breakfast oats

Banana Oats with Blueberry Chia Sauce

Banana Oats with Blueberry Chia Sauce

I am the kind of girl who thrives on change. Por ejemplo: I love switching up my class schedule each semester, I take a different route to class each day, I change up my workouts, I love the change in weather, and I am even making a point to try something different for breakfast. Well…not

that

different, but I did put an AWESOME twist to my typical banana oats

*I am apologizing in advanced for the terrible quality of pictures in this post! I had to use my digital camera because I am still waiting for my DSLR battery to arrive in the mail. Bare with me folks

Blueberry Chia Sauce meets Banana Oats….

I decided to do a little experimenting with chia seeds this morning. I’ve found that chia seeds expand and become gel-like if you soak/cook them in some sort of liquid. 1/2T chia seeds almost doubles the size of my typical oat mixture! So, I figured I could thicken some blueberries to create a yummy topping by mixing the two together! Success!

Hello….Blueberry Chia Sauce

Blueberry Chia Sauce
-1/4C blueberries (I used frozen)
-1/2T chia seeds
-1T water
Directions: In a small sauce pan, heat all ingredients together on low-medium heat. Stir your sauce frequently so it doesn’t burn to the pan. I cooked mine for about 3ish minutes. Before serving, I let it sit in a small bowl for an additional 3-5 minutes to further thicken.

I am excited to make different variations of this sauce: mango, strawberry, raspberry, MMmm! Also….to use it as a topping on different types of food: pancakes, waffles, frozen yogurt, ice cream, & Greek yogurt.

This morning, I made the sauce first, and then used the same pan to cook my oats in.

Banana Oats with Blueberry Chia Sauce
-3T rolled oats
-3T oat bran
-1/2T chia seeds
-1/2 large nanner
-1/4C vanilla almond milk
-1Cish of water (I didn’t actually measure)

I obviously wasn’t satisfied with just Blub Chia Sauce so I added some raisins and a blobity of almond butter for some extra umph. I am convinced nut butters are the key ingredient to my morning satiation.

Back to my tangent on change. Today is the first day of spring! You know what that means! The weather is a-changin’! Today’s high was 49 degrees so I jumped on the decision last night to run outside instead of my per usual trip to the gym. I made the mistake of 1) not checking the temperature at 8AM and 2) not wearing higher socks. My ankles were FROZEN by the time I got back.

I did a 4 mile loop towards downtown. I was presently surpised to see lots of people up and at it this morning despite the clouds. This is a photo of St. Anthony Main. She may look ugly right now due to bare trees and gross mud/snow covered grass, but during the summer this is one of my favorite spots for dinner!

Soon enough, the flowers will be blossuming and the trees will be budding. I can not WAIT for this change to occur 😛 I am off to my Monday night class :/ Soon enough it will be summer!!

Do you eat the same thing for breakfast every day?

Do you like change?

What are you most excited for as the weather gets warmer?
