Clever post title, eh? Yah…Well I probably gained a good 5 lbs due to my outrageous consumption of balls this weekend. They are just the perfect little snack slash easy to make slash extremely inexpensive.
This time I made another chocolaty version. Oats + Peanut Butter + Honey + Cocoa Powder + Stevia. What’s not to like? I learned that the secret to having a moist, chewy ball is DRIPPY peanut butter. Yesterday’s batch was made with the grind-your-own peanut butter from Whole Foods that isn’t exactly the “dripping off the spoon” kind of peanut butter like today’s. Big difference in texture here.
Chocolate Peanut Butter Balls
Ingredients
-1C quick cooking oats (certified gf)
-1/2C all natural peanut butter
-1/2C honey, raw
-3 packs of stevia, raw
-2T cocoa powder
Method
1. In a small food processor, process oats for 15-20 seconds. You don’t want to turn your oats in to oat flour, rather coarsely chop them up.
2. Add the rest of your ingredients and process for about a minute, or until it becomes doughy. (You may need to add a squirt more of honey if it is still too dry.)
4. Using a small cookie scoop, scoop out the dough and role between your palms.
I ended up doubling the recipe so I could make some Chocolate Coconut Peanut Butter Balls. Take the same Choco base recipe and then role it in non-sweetened coconut! I love love loveeee the addition of coconut! I am glad that I opted for the non-sweetened version, rather than the sweetened kind.
