Apple Cinnamon Baked Oatmeal with Pomegranates and Cinnamon Leche Sauce
I could eat baked oatmeal for days. Literally…it’s dangerous when it’s just sitting in my fridge because you know me- cold food is my favorite!
Lately I have really been enjoying mixing cold and hot foods. Like fresh out of the oven oatmeal bake with my cinnamon leche sauce made from greek yogurt, honey, cinnamon, and a little splash of milk!

So I am a HUGE apple cinnamon fan. Let me tell you- the pomegranate are an excellent touch! Those little buggers burst in your mouth for a last minute addition of flavor.
They also make everything look pretty
Because it’s just me here (Blake is in Brazil), I’m trying to keep my recipes to 1-3 servings so I don’t wait a TON of food. I got about 2 servings out of this bad boy. Only 2. Sigh. I wish I had this RIGHT MEOW.
The leche sauce was rather simple. I mixed Greek yogurt, almond milk (or any kind of milk) and a pinch of cinnamon and then sweetened it with honey. Unfortunately I didn’t write the exact measurements out, but I want to say it was 2 tablespoons greek yogurt, 1 tablespoon almond milk, 1/4 teaspoon cinnamon, and 1/2 teaspoon honey.
Leche sauce is more of an art than a science. It just is.
Basic Ingredients
1.5 cups oat meal
1.75 cups almond milk
1 large apple (any kind will work), peeled finely chopped
1.5 teaspoons ground cinnamon
1 teaspoon vanilla
pinch of salt
1/4 cup pomegranate seeds
1 egg white
How to make Apple Cinnamon Baked Oatmeal with Pomegranates and Cinnamon Leche Sauce
First, preheat oven to 350F then spray a medium size baking dish with nonstick cooking spray. Place all ingredients in a large bowl and mix. Transfer into baking dish. Bake at 350 for about 30 minutes or until the top begins to brown.
